Mediterranean cruise

Europe adventure part 1-going back home…

…but before we left to the airport we still had some food left and 6 eggs to eat to completely clean out the fridge. I don’t remember having 3 eggs in one sitting but this is how it started:

Egg omelette with tomatoes and spinach

Waiting for our delayed plane I sipped on my last Americano

An 8 hour flight it’s a long time, adding transfer flight, waiting time etc I couldn’t wait to stretch out a little bit

I had a good sleep in the plane but I was tired and stressed out already and I traveled with a sick husband so when I woke up I was feeling really really sick too. Sore throat and a headache bleh… I wasn’t sick for the last 3 years, I guess, my body really needed a break and at this point it said enough! If it could wait a little bit longer…

While we are away our friends are taking care of our dog but here I have another buddy who is making my stay more enjoyable-if she feels like it;)

Goji Berries Protein Bar to snack on

I don’t want to say it out laud but fall is coming,,, and with fall the tendency to get sick. My immune system is pretty strong but I can never have enough of Vitamin C. Especially when I am stressed out and have no time to relax. My week was pretty intense with running errands before we leave for our vacation so I made these bars to help me with dealing with hunger when I am on the run.

Goji Berries are pack with vitamin C (more than oranges) and have more beta-carotene than carrots ( good bye wrinkles!!!). You can eat them however how you want, raw or cooked, add to anything really. The taste is similar to raisins but more tart.

with modification: I used: 1 cup of almond flour, add ¼ goji berries and pecans (instead of almonds) and coconut to sprinkle on top.

Vegan Zucchini Tofu Lasagna has been served

I am always trying to get the best pic of a meal I am blogging about -sorry, not this time.
Maybe I was too hungry or too inpatient to spend some time and take a proper shoot before I dug in. And believe me it tastes better than it looks.
I was craving lasagna for a while (again) but wanted to try it without using a traditional lasagna pasta. I wanted to make it a lighter lunch and easier for my digestion and whoa-everything is possible.

Vegan Zucchini Tofu Lasagna

inspired by Elise and this recipe
You will need:
1 big zucchini
a good marinara sauce (choose the one you really like)
½ block organic firm tofu
a handful of spinach
spices:
turmeric, “Tamari” (gluten free soy sauce), mustard, crushed red pepper flakes, herbs de Provence, nutritional yeast.

Preheat the oven to 375F.
Start with making “tofu ricotta” by smashing tofu with a fork and adding all the spices into a bowl. Add chopped spinach and let it sit and marinate for a bit. Peel a zucchini using a sharp knife or a vegetable peeler to shave lengthwise noodles. It’s pretty tricky at first but it doesn’t have to be pretty;)
Start lining your lasagna in a baking dish with marinara on the bottom, zucchini noddles, tofu ricotta and so on until you reach the top. Sprinkle with more nutritional yeast or cheese of your choice. Place into the oven for around 40 minutes.

We enjoyed this lasagna for the last week. Considering that my picky husband ate one on his own when I made it for the next day,

I am pretty sure you won’t regret it.

Where have you been?

I will be honest with you, I didn’t go for any vacation yet if this is what you were thinking. I just got into a weird mood in a past few weeks, I felt kind of drained so I wasn’t posting at all. But just to give you a quick blur I got some pictures to share from what was happening:

I probably missed tons of small things that were happening. We are now 2 weeks before going for our vacation to Europe (visiting my family in Poland and going for a Mediterranean Cruise). I am slowly getting excited about it.

I tried TRX, I got into running  and I am quite happy about it. I made a few recipes but didn’t catch it in a picture but stay tuned for upcoming recipes soon.
