One-skillet meals in less than 20 min

Hi Friends,

So how was your week???

As promised I am back and I wanted to share with you my newest cooking secret( lol not really a secret).

You have so many options with the food you can combine that I will leave it up to you and your taste. Here are some of my recent choices:

(Paleo Friendly, gluten free, grain free)

Spaghetti squash “pizza”

I know it may all look the same to you but it’s not, just the method is the same. So let’s just get straight to business.

Less than 20 min method;)))

Decide what do you wanna eat:you know which veggies you like, do you want to add some grains or starches and what kind of protein you would like to have with it.

I like my veggies soft so most likely I will steam them first for a few minutes but you can go ahead and saute them on the pan right away  for a few minutes, then add you protein and the last part: insert into the oven then BROIL for 7-10 min.

That’s the whole secret. Everything is coming out crispy and tasty. So I use this style of cooking pretty often nowadays. I am having lots of craving for poached eggs, veggies and warm food and it’s so simple this way.

Of course you see my spaghetti squash dish was also done 20 min but I made it ready on Sunday night to eat it during the week-please  keep this is mind that you need to be sometimes prepared especially on the busy day.

My favorite meals of the week

Hello Friends,

I hope your week is fabulous so far and before Friday begins I want to share with you my last week cooking adventures.

I was very pleased with some of the meals that were pretty much last minute experiments:

All of them are Paleo friendly, grain free, dairy and gluten free

Sunflower Bliss Bars

Short and sweet!

This weather makes my so tired. And when I am working in the evenings I do need a lot of motivation to get out from the house. These bars do a great job. Protein+fat+chocolate flavour=energy

Sunflower Bliss Bars

You will need:

1/2c sunflower seed butter

2 tbsp maple syrup

2 tbsp carob* powder

1/4 c hemp seeds

1/4 c coconut flakes

Start by blending sunflower butter with maple syrup until smooth. Add hemp seeds, coconut flakes and carob powder blend again until mixture becomes kind of like dough. Spread it on the plate and put into a freezer for a bit.

*carob powder-If u are allergic to chocolate (pure cacao) you can use carob instead. Carob doesn’t contain any caffeine or theobromine, two mild stimulants found in chocolate so it is a great alternative for chocolate substitutes. It’s a legume from the carob tree. It has similar texture and flavour to traditional chocolate. Carob is not as bitter as cocoa so if you are using carob instead of cacao in your recipe, you should cut down on your sweetener.

I don’t have problems with eating pure chocolate but I like using carob just to switch it up and to reduce sugar intake in my recipes.

Cool off with the Blueberry Grape Sorbet

I hope you had a fabulous weekend everybody. We spent Saturday at our friend’s house for the twins’ birthday party. It’s such a joy to watch kids running around, playing and seeing them happy and healthy. They turn 3 already. One more time happy Bday guys!!!

Kids didn’t care that it was crazy hot and humid while adults were trying to cool off in any way to survived.
I find it very challenging to feel comfortable while being outside in this heat. I love summer, but this tropical weather makes me more tired than in winter time blues. So if you are looking for ways to cool off, you can try to make this
Blueberry Grape Sorbet. It’s vegan and dairy free, delicious and very refreshing just in time for days like these.

Ingredients:
1 cup of frozen blueberries
1 cup of frozen seedless grapes
1 tsp chia seeds
½ c almond milk
1 tbsp of honey/Agave or Maple syrup
(you can add a scoop of protein powder or nuts if you wish)

Blend everything in the food processor until you get a smooth consistency and place it in a freezer for a bit.
Enjoy as you need frozen pick me up treat.
