Crustless crockpot quiche


Hello My friends,

Yes, you heard me right.

After heavy Easter meals, lots of leftovers and sweets during a week my tummy went on strike yesterday. I didn’t feel well since then so I decided to come back to the basics. I made a simple quiche for my lunch. It’s not a first time (try this one  or this one), it is one of these meals that just brings some comfort to your tummy. I decided to use “my friend” crock pot to help me with it. Instead of making it really crispy – I made this quiche extra soft. Which tastes delicious for me.


You will need:

2 Servings

1 cup (or more if you wish) already cooked spaghetti squash

1 c of organic spinach

4 eggs

a handful of cherry tomatoes

1 small zuccini

1/2 crumbled goat cheese

spices of your choice

Mix everything in a bowl.Make sure you will grease your crock pot with some coconut oil. Place the mixture in a crock pot and put it on High for 2,5 h. Serve with some avocado or a hot sauce or with both (if you are like me;)


The real verdict will be made when Tom gets home. He is quite picky but I think he will enjoy is as much as I did.
