Quick lunch anyone?

Since I have so many tummy issues I have started seeing a specialist to work on my diet. His first recommendation was: “cook your food as often as you can”. Apparently I should avoid eating anything that’s is raw so it will help my tummy with digestion. As simple as it seems to be, my traditional cuisine is heavy and a stew always reminds me of loaded with meat and oil meal…
…but not this one. This lightened version has no impact on my tummy, spells delicious and tastes even better. And of course when my tummy is happy I am happy.
Healthy Moroccan Vegetable Stew
1 cup of diced butternut squash
1 cup of diced carrots
1-2 chopped celery
1/2 of leek
1 cup of green lentils
3 plum tomatoes
3 cups low sodium vegetable broth
2 tbsp coconut oil
spices: 2 tsp grated ginger, 1 cinnamon stick, 1/4 tsp red pepper flakes, salt & ground pepper to taste
Heat the oil in a large pot over medium heat. Add the leek and saute for 2 min. Add squash, carrots, celery; saute for another 5-8 minutes. Add broth, lentil, tomatoes, cinnamon stick and other spices. Bring to boil then reduce the heat to low and simmer for 1 hour. Stir occasionally. When it’s ready, remove cinnamon stick
Serve with a gluten free slice of bread.
PS. My knee is better. It took me 2 days to recover…Eh, these winter sports..
Something delicious for the weekend
Process until fine
1 c of nuts (pecans, cashews, almonds, hazelnuts anything you want)
I added 1 tbsp of chia seeds and dry cranberries, 1/4 c of coconut
1/2 c Peanut butter
1tbsp coconut oil
1-2 tbsp Maple syrup or honey
1 tbsp chocolate chips
Pour together in a bowl. Spoon onto the baking paper or a pan. Cool in a fridge or a freezer.

1/2 walnuts 5(soaked) sundried tomatoes
1 tbsp tamari, 1 tbsp dijon mustard, 1 tsp cumin and 1 tsp turmeric
Process everything in a food processor until you see crumbs.
Add 1-2 tbsp “Sabra” hummus ( my fav. Roasted red peppers)
1/2 baked spaghetti squash and steamed asparagus
Mix together and enjoy your lunch,
It’s been a hard week for both us. Tom was officially sick and I was not feeling great either. Slowly things start to go back to normal.There is a few things I want to share in a near future but for now- yesterday’s dinner- Mediterranean Quiche.
Fulfilling comfort food for not great days.
cup of fresh spinach
1/2 c of Goat cheese ( if you don’t care about the kind of cheese, feel free to use feta)
1 tsp herbs de Provence; salt& pepper
Mix it together. Preheat the oven for 375F and bake for around 40 min. After 20 min add olives on top and sprinkle with nutritional yeast-continue to bake.
