Healthy vegan Tahini dessert for Euro 2012

I thought I will check in. How is your week going?
It’s raining here for a last couple of days but isn’t it a perfect excuse to spoil yourself with a guilt free dessert? What else you could do..;)
Especially with the start of Euro 2012 tomorrow. I have a feeling that we will spend a lot of time on the couch in front of the TV this weekend. So it’s healthier than chips and better to be prepared;)

Tahini dessert

Ingredients:
(for 1 person)

2-3 tbsp tahini (Organic Fair Trade sesame Tahini)
150g silk tofu (Sunrise)
a few drops of lemon juice
1-2 tbsp Maple syrup
2 tbsp of almond milk
handful of chopped hazelnuts
raw cacao powder/dark chocolate for decoration

Using a food processor mix the first 5 ingredients. Place chopped hazelnuts on the bottom of your cup, add the mixture on top and cacao powder or grated chocolate. If you really want to go crazy- add a vegan whipped cream on top;))

Wedding and Clean Egg Muffins to go

We just came back from a blast of wedding at The Cambridge Mill in Cambridge, On. I love weddings so I was super excited to celebrate with our friends on their BIG Day.

Of course, it took ages to find a dress for me but fortunately I was pretty happy with the “retro” dress that I was wearing. What do you think?


The wedding was great. The Cambridge Mill is a beautiful venue for that occasion. You can see the waterfall from the windows that add this extra touch to inside design.
After dinner the party started and the dance floor was packed until they called it a night. Lots of fun!!!


We were really busy in a past week with the preparation for the wedding so my egg muffins were great for on the go. I do recommend heating them up before you eat them and put some extra spicy sauce on top.
Clean Egg Muffins on the Go
inspired by “Oxygen” recipe

3-4 whole eggs
6-7 egg whites
½ chopped red pepper
1 cup of spinach
1/2tsp of basil, oregano,
dash of salt&pepper
sprinkle with nutritional yeast on top

Mix all the ingredients in a bowl. Coat the muffin tin with a little of olive oil;preheat the oven to 375F.
Use 1/3 cup measure to scoop the egg mixture into the muffin tin. Bake for 30minutes  until slightly brown on top.
