Recap on some eats from the week and Lentil Spinach Quiche

It’s Spring time. Today I went for a walk in the morning and I couldn’t get enough fresh air penetrating my skin …and warm breeze was awesome. Maybe I am a weirdo but it feels so good to be outside right now.

Mornings are all about smoothies/ green juices and overnight oats this week

Spinach, mango, ginger and half of lime + stevia to taste

Inspired by Lori and Michelle and their very simple version of quiche I made a delicious lunch for us yesterday. I love it. The recipe is so simple and you can adjust it to whatever you have in your fridge so here you go:

Easy Lentil Spinach Quiche

3 eggs
2 cups of green veggies (I had spinach and kale handy)
¼ block of tofu (sliced)
5-6 cherry tomatoes
½ cup of cooked green lentils
sprinkle with nutritional yeast and roasted pumpkin&sunflower seeds
spices I used: fresh coriander, Cayenne pepper, black pepper, oregano and basil.

Just blend everything together in a food processor, pour the mixture into 8 inch pie dish or a pan and bake for 40 min at 350F
Great comforting food and lots of greens to strengthen your immune system in a Spring time.

So for lunch I had a basic salad with peppers, tomatoes and hummus with quiche and carrot flax crackers-YUM

I don’t know what’s up with my diet but chocolate and sweets are just in demand on daily basis so even if I don’t have any at home and didn’t have time to make it at least Apple Pie Ice cream with almond butter will work

¼ cup of applesauce + ¼ greek yogurt, dash of cinnamon and stevia to taste. Put it into a freezer for 10 minutes – Vuole.

Time for homemade Chocolate “Cliff” bars!!!

Hope you enjoyed your weekend.
There was not too much going on here, very lazy and relaxing time that Tom & I actually needed. Besides I wasn’t feeling very well in a last couple of days and we needed to take care of our favorite taxes…so finally this is done.

As usually on Saturday we ran errands and spent way too much!!! money in the Organic Garage; There is always something that I don’t need that catches my eye.
While our meals were not very well organized this weekend I did actually put some thought in to the upcoming week and prepared a few things.
My pantry is full of “cliff” bars “larabars” . Tom can’t live without them. And I love them both but my body doesn’t respond well to store bought “cliff” bars. I was trying to figure out which ingredient might be an issue for me but no luck. So I made my own;)

Homemade Chocolate “Cliff” bars that will not last long in your cupboard.

Inspired by this recipe

1) In one bowl mix:
½ cup oat flour
½ cup almond flour
1 tbsp baking soda
pinch of salt
scoop of chocolate protein powder
1tsp of flax
1tbsp cocoa powder
¼ cup roasted almonds

2) In a separate bowl combine:
½ cup  of unsweetened applesauce
½ cup of almond milk
¼ cup of date paste (dates chopped in a food processor)
¼ cup melted carob chips with 1 tsp coconut oil
1 tsp vanilla extract

Combine wet ingredients and poor into the first mix. Stir together until smooth and bake around 20 min at 350F. Refrigerate or devour them at once.

Disconnected…

No, I didn’t forget about you guys. I simply didn’t have a connection to the world (my charger for my laptop died).  I had to stop my weekly or I should say daily routines of catching up with my favorite blogs, researching new recipes and even replying to emails. All other things that I do got disorganized and failed as well. I didn’t practice this week – so I feel very disconnected from my body. Tonight after my class I am planning to stay in the studio and practice on my own.

Some good news is that I didn’t stop cooking and trying new recipes. I found some amazing desserts but they were gone before I could take a picture so now I need to do it again-poor me;).

I also started juicing and I have noticed small positive changes with my belly so soon I will share with you some of my fav. recipes.

Finally this week’s HIT for dinner was: Fall TVP Burrito. Turned out delicious, you have to try it.

Ingredients:
1/2 small butternut squash (backed a night ahead)
½ cup TVP
1/2 cup of brown rice
2 whole wheat tortillas
1 ripe avocado
1 tsp nutritional yeast

1/2 red pepper
3-5 cherry tomatoes
1-2 small mushrooms
½ sweet onion
3 tbsp EVOO

a little bit of shredded rice vegan cheese on top



Cook the rice. Prepare TVP with boiled water as usual. Saute all the veggies ( without avocado) with olive oil at the end add smashed squash and TVP. Mix together. Mash the avocado with nutritional yeast and spread it on the warm tortillas. Add rice, and TVP &veggie on top, wrap it up.

So good so Enjoy it!

Random lunch ideas & amazing socca discovery

I hope your week was more efficient than mine. I am finding myself very fatigued and lack motivation to have things done recently. As I can read from other bloggers, I guess it’s the season.

As mine mood swings I am not getting very creative as well. I am used to plan my meals and at least have an idea so I know what to prepare a day before or buy ahead. Hmm,,,apparently not anymore. During this week I was just grabbing whatever happen to be in my fridge-mishmash-and done. (I don’t have to tell you that for those who have IBS it’s a very bad idea=symptoms increase). Thanks to shopping in an organic market last Saturday-my fridge was pretty well stocked. So the random lunches were not too bad and pretty dam tasty. Here it is:

Spicy rice cake sandwich

Rice cake (I used the one with basil and tomato spice) spread mashed avocado, added last piece of Veggie Slices” soy-based mozzarella, scramble egg, spinach, zucchini and tomato, sprinkle with basil. Done in 5 min.

Mishmash Delicious Salad

Lettuce (Iceberg this time), red pepper and cherry tomatoes chopped, mashed ½ avocado, “Sabra” roasted red pepper hummus, scramble egg and …goat cheese. You don’t have to believe me just try it. Yumi.

Friday Discovery-Socca

This is a huge step for me. Fist it’s kind of a substitute for bread, second-no symptoms even with chickpea flour as an ingredient.(I am not really good with tolerating chickpeas). I found the recipe and somehow I decided to give it a try-turned out amazing!

1 cup of chickpea flour

1,5 water

pinch of salt

3tbsp of melted coconut oil (You can use olive oil as well)

Turn the oven up to 400F. I used coconut oil so had to melt it before the mix…Then mix the flour with water & salt pour onto pan and baked it for 30-40 min.

I made a sandwich with satue kale, carrots and hemp seeds with the coconut oil and 1tbsp of peanut butter (weird I know, but tasty) as well.

I have already experimented with adding 1 cup of pumpkin puree to socca recipe and it was great as well. Tom ate it today topped with beef strogonov (to satisfy his meaty taste).

Highly recommend to give it a try.

Don’t make your Friday stressful!!!

Hey Guys,

Impossible… it’s already Friday and I guess I slept through Monday&Tuesday. I can’t even recall what I was doing  these past few days. Anyway since we are here: Happy Friday!!!
First morning observation that I want to share is that apparently my dog is VEGAN. Her bowl is full with her breakfast but, no, she is not interested in eating it. Instead she grabbed half of Tom’s sandwich that was in his pocket from yesterday – Seitan avocado sandwich and seriously she almost bit my fingers off. I told him it’s delicious! At least Sophie can appreciate my efforts here;)

Other thing that I catch myself today is that I am very good at making my life hectic and stressful. Friday is one of the not many days in my week when I have half day off, so obviously I want to make use of that. I was planning to hit the gym and afterwords do groceries and then go to the hot yoga class. Hmm…Quite a lot to do in the morning especially that I know I have to work in the afternoon, make dinner in between and so on…I was debating on this plan for a while, probably took me longer then just to do it. Somehow I felt stressed that I need to rush to make it happen. And then I heard: “Don’t make your Friday stressful”.
So true…why anyone would do it to themselves if there is no real point. No one is forcing me to do both things in one morning. Just, I guess my mind is playing guilt trips on me…After wasting my morning stressing out I am just going to the gym and after coming back to do my home practice if I feel like it… Yeah, that’s the plan.

Do I always need to have a plan for every day in my week? My advice: think twice
if it’s worth it to stress out.

Faced the music…

I didn’t wake up with much excitement today. My morning adventure was to visit the dentist for a root canal. Hrrr… rather traumatic experience. And… they made me wait for an hour and a half which just deepen my fear. After two injections I went numb and from that time you can call me: Crooked mouth.

Before that my day was pretty relaxing. I was playing a good wife! and prepared a delicious breakfast for Tom, (who just finished the night shift week). He came home for the Peanut Butter Protein Pancakes!

2 tbsp of peanut butter+scoop of chocolate protein powder+1/3 cup of milk of your choice.

Stir until there will be no lumps. I used Coconut Oil on the pan. On the top sprinkle some blueberries and raspberries. I took a photo before he came in and this is what I had to deal with…

As the day continues it brings more negatives. My mom just called letting me know that my God-mother is hmm…not dealing well with her cancer….I don’t even know what to say or think and why do I raise this here.

I am so far away,,,I can not even support my dad (his sister) with this one. So now I am thinking about you all, my close family 7000 km away…

As the numbness in my mouth goes away I will practice yoga tonight keeping all of you in my heart. Hopefully I can send some positive energy there.

Weekend Mission Accomplished

I read that this morning and I can completely relate it to this passing weekend. As I had 2 full days for myself…, without any family gatherings or evening events I was terrified that this will be boring and lonely time. Hmm I guess I should stop thinking this way. This just sets my mind in a mood of doing something all day long. I had three classes to teach this weekend and that’s Ok.  Besides that I came up with all sorts of housework. I’m not even going to mention “feeling guilty” that I didn’t go to the gym since I could of, just didn’t feel like it.

And of course it’s a weekend so we should eat something yummy. I have this huge craving of treating myself with a lasagna for a while. My IBS doesn’t really like it so some cravings needs to wait until I can not handle it anymore;) Yesterday I finally made my experiment work. Vegan TVP Lasagna turn out great without any unusual “belly behaviors” this morning.

I used: Brown Rice Pasta from All Natural “Rizopia”,  TVP, “Veggie Slices” soy-based mozzarella, pure tomato sauce, spices and veggies such as asparagus, red, yellow peppers, zucchini, onion.

Treat everything like for a usually lasagna. Cook pasta al dente, saute veggies in tomato sauce with spices- make your sauce thick! Prepare TVP on the side. Then layer sauce, pasta, TVP and mozzarella and so on. Put into the oven in 375F for around 40 min.

So good!!!

Another thing I have in mind for a last few days is something with chocolate and pumpkin.

Raw Dates Chocolate Bar

Blend ½ ripe avocado, nuts of your choice(e.i. 1/2 cup walnuts, almonds), 1-2 tsp cocoa powder. Layer on raw coconut flakes, mash it and freeze overnight. Next day just cut into the shape you desire.

Pumpkin Spice Coffee-it’s the season right?

Since everyone is talking now about the pumpkin season how could I miss that. Here it is.

1/2 cups soymilk
1-2 shots espresso OR 1/2 cup strongly brewed coffee
2-3 tbsp canned pumpkin (unsweetened)
You can add some sweeten to taste (I used 1 tsp Maple syrup)
1/2 tsp cinnamon/nutmeg
1/2 tsp vanilla extract

Blend pumpkin, milk and spices together. Heat it on the oven or microwave to make it warm. Pour coffee to the cup and milk pumpkin on top.

2 cardio for 30 min on elliptical

Am I that bad???

Finally it’s late Sunday night-beauty time. Last craving of this weekend – hot bath with some essential oils to relax before next week. And maybe I will add some meditation at the end.
