Since I have so many tummy issues I have started seeing a specialist to work on my diet. His first recommendation was: “cook your food as often as you can”. Apparently I should avoid eating anything that’s is raw so it will help my tummy with digestion. As simple as it seems to be, my traditional cuisine is heavy and a stew always reminds me of loaded with meat and oil meal…
…but not this one. This lightened version has no impact on my tummy, spells delicious and tastes even better. And of course when my tummy is happy I am happy.
Healthy Moroccan Vegetable Stew
1 cup of diced butternut squash
1 cup of diced carrots
1-2 chopped celery
1/2 of leek
1 cup of green lentils
3 plum tomatoes
3 cups low sodium vegetable broth
2 tbsp coconut oil
spices: 2 tsp grated ginger, 1 cinnamon stick, 1/4 tsp red pepper flakes, salt & ground pepper to taste
Heat the oil in a large pot over medium heat. Add the leek and saute for 2 min. Add squash, carrots, celery; saute for another 5-8 minutes. Add broth, lentil, tomatoes, cinnamon stick and other spices. Bring to boil then reduce the heat to low and simmer for 1 hour. Stir occasionally. When it’s ready, remove cinnamon stick
Serve with a gluten free slice of bread.
